How do I make Cuban Coffee?

To make cuban coffee one must first invest in an espresso maker (or an Aero Press if you want something quick and simple).

Traditionally, cuban coffee is very sweet, put a good amount of sugar into a cup - 1 teaspoon per espresso is a minimum, the key to a great cuban coffee is that its extra sweet. Make your espresso per the usual method, then pour a small amount of the espresso into the cup in which you placed the sugar, mix it until it is the consistency of a thick paste. This thick syrupy mixture will float to the top in the next step so make sure you get the paste right, you don't want all of the sugar to dissolve right away.

Once the sugary paste is consistent and integrated, pour the rest of your espresso or concentrated coffee into the cup, a thick brown foam will appear if you're doing it right! For an extra authentic experience pour your coffee into tacitas (cuban coffee cups resembling small tea cups - shown in the picture.) Best served hot!
